I can't remember what they originally called for - blueberries or raspberries. Having come late to blueberries, I make these with raspberries and they are delicious.
1/2 c. butter
1 c. sugar
2 eggs
2 c. flour, sifted
2 t. baking powder
1/2 t. salt
1/2 c. milk
1 t. vanilla
2 1/2 c. berries
- Cream butter and 3/4 c. sugar.
- Add eggs. Blend well.
- Sift all dry ingredients.
- Add to butter mixture, alternating with milk and vanilla.
- Mash 1/2 the berries with a fork and fold into the batter.
- Fold in the remaining whole berries
- Pile high into greased muffin tins.
- Sprinkle with remaining 1/4 c. sugar.
- Bake at 375 for 30 minutes.
